Sometimes a big cake is just too much, especially if it’s a nice spring day and you want to enjoy the sunlight. Not such a good idea with your stomach full of heavy chocolate cake…
Here’s a better idea: Pink Lemon Squares – little bits of a light cake base with fruity strawberry mousse on top.

Pink Lemon Squares
300 g Strawberries (fresh or frozen ones)
150 g flour
50 g icing sugar
75 g cold butter
75 g warm butter
A pinch of salt
6 lemons
300 g sugar
75 g starch
6 egg yolks

Strawberry mousse cake
Strawberry mousse cake

Mix flour, icing sugar, a pinch of salt, the cold butter and 2 tablespoons cold water to a smooth shortcrust. Butter a squared springform (alternatively a round one) and press the batter against the floor. Put into the fridge for half an hour. Preheat the oven at 150 °C circulating air. Use a fork to cut little holes into the batter. Bake in the oven for 20 minutes. In the meantime, blend the strawberries with the juice of the lemons. Add butter and sugar and boil up whilst stirring.

Mix the starch with 7 tablespoons of cold water. The best way to do this is in a shaker (this hint comes from my Mum, who told me AFTER my first unsuccessful try). Stir in the starch and let boil for about a minute.
Take the pot off the stove. Mix the egg yolks with 2 tablespoons of the strawberry crème. Then, add the eggs to the crème and stir in well.

Spread the strawberry mousse on the cake batter and put it into the oven again. Let bake again for 20 minutes.
Take out the cake and let it cool down in the springform (at least two hours and best in a cool place). Take off the form and cut the cake into small squares.

These pink lemon squares are such a nice treat if you don’t want to eat a ton of cake, but are craving something light. So fruity, yummy. Next time I’ll try this recipe with blueberries. Do you have any other suggestions which fruit I could use? ~Hetty~
