“Cheesy” Spinach-Pizza-Bites with Gorgonzola

What is it about food from the oven that makes me feel so comforted? Is it the oven heating up the kitchen? Is is the consistency of oven food, think lasagna, quiches, casseroles that reminds me of childhood? Or is it the fact that I can throw together my ingredients and watch the oven work its magic? Whatever it is: it makes me feel good and eagerly anticipate oven dishes. This one also includes another magic word: pizza! And it combines the savory taste of gorgonzola cheese with my oh so beloved spinach and it is REALLY easy to make. No cooking skills needed. So here it goes…

Spinach-Pizza-Bites with Gorgonzola
1 big sheet of flaky pastry
1 package of spinach
1 gorgonzola

How to
Cook the spinach according to the package instructions – you really only need to defrost it. Strain off the water. Place the pastry on a piece of parchment paper and cut into squares. I cut eight squares. Try to spread the gorgonzola onto it, you might need to crumble it. Then distribute evenly the spinach. No seasoning required because gorgonzola really dominates this dish.

Bake in the oven according to the pastry packages instructions or until the cheese beginns to run. Yes, it tries to escape the little packages that make the pizza bites. And no, they are not only just one bite.
