Tastes like autumn: Swedish accordion potatoes

Potatoes are one of the most underrated veggies I think. There are so many different ways you can prepare them and they are always super yummy. Plus they are super healthy and make up a good alternative to all those high carb stuff such as pasta or rice.

When I saw this recipe for accordion potatoes, I just had to make them myself. I’ve heard of them before and somehow I remember that they were called “Swedish Potatoes”.

Anyway, here’s what you need per person as a full meal. Take less if you want it to accompany something else.

Swedish accordion potatoes
4-5 middle sized potatoes
Some butter or vegetable spread
Salt, pepper and herbes de provence

Wash the potatoes thoroughly and dry them. Lay them on a cutting plate how they would lie without holding them. Then slice the upper side several times about ¾ of the potato deep. Place on a baking tray and put some butter into the cuts. Season with salt, pepper and herbes de provence.

Place the baking tray in the oven and let bake at 190°C for about 30-40 minutes. The exact time depends on the size of the potatoes.
