Cold day comfort food: Potato Zucchini Soup

Soup is really comfort food for me in autumn and winter. When you come home after a long day at university and it’s cold outside, soup is the best thing to warm me up! And there are so many different possibilities, so many different vegetables that I could try to turn into soup…. Therefore it really stinks that my blender broke when I made the first soup of the season.

Anyway, here’s the soup I made: Potato-Zucchini-Soup
(for one person as a main dish, 2 persons as a starter soup)
5-6 middle-sized potatoes
1 zucchini
vegetable broth cubes or powder

Peel the potatoes and cut the in small cubes. Wash the zucchini and cut into small cubes as well.

In a pot, heat the potatoes and zucchini with about 1-1.5 liters of water. The exact amount of water depends on your preference, if you either want a really smooth soup or a more fluid one. Add the vegetable broth. Boil for once, then let simmer until the zucchini and potatoes are cooked.

Now take the blender. Make sure to correctly put all the pieces together, otherwise you’ll end up like me… Blend the soup until you get the desired texture. Enjoy!
