Christmas is all around, here on the blog anyway! And as we can’t get enough of Christmas baking either, here’s a recipe that’s a variation of Anna’s Spicy Red Wine Cake.
Here’s what you need for about 12 rose wine muffins:
125g vegetable spread
½ sachet of vanilla sugar
3 tablespoons soy flour
1 teaspoon baking powder
50g dark chocolate
100ml rose wine
In a bowl, mix the vegetable spread, the sugar and the vanilla sugar. Mix with a hand mixer until foamy. Add the flour, soy flour and the baking powder and fold it all in.
Now, cut the chocolate into little pieces (or use a grater), add it to the dough. Add also the rose wine and the cranberries. In the case the batter is too dry, just add some more wine.
Put the batter in muffin cups and bake in the oven at 175°C for 30 minutes. Enjoy!
