After my last pizza fail where I had to switch from artichoke toping made from scratch to a simple, yet delicious tomato pizza bread the idea of making an artichoke pizza had settled in my mind. So this time I opted for the safe way and went with prepared artichokes.
A little bit of lemon juice made this combination a very yummy spring pizza (I can’t tell you enough, I am CRAVING spring)!
Start with the usual pizza base. Mix all the ingredients together, knead well and roll out the dough on a baking tray lined with baking paper.
For the topping you’ll need
1 can of artichokes
1 (organic) lemon
2 tbsp soy cream
salt and pepper
Extract the juice from the lemon and drizzle it on the artichoke bulbs. Season with salt and pepper as well. If you want you can also add some parmesan cheese here (or you can leave it in the vegan version without cheese, if you’re on a vegan lent just like Anna.
Place the pizza in the oven and bake at 200°C for about 20 minutes. Take the pizza out of the oven and enjoy!
