Meine ursprüngliche Idee war eine Babydecke im Stil vom Hexagon-Kissen mir wurde aber schnell klar, dass ich dafür nicht genug Stoff in meinem Berg an Baumwollstoffen hatte – say What?!? Eine andere Idee musste her. Sie ließ nicht lange auf sich warten. Rachels Easy Patchwork Quilt auf A beautiful mess ging mir nicht mehr aus dem Kopf. Schnell zu nähen, simple Streifen deren Stoffmuster super zur Geltung kommen würden. In der Zwischenzeit hatte Hetty mir nämlich die tollen Stoffe von Riley Blake gezeigt und ich hatte mich Hals über Kopf in die Cottage Garden Serie verknallt. Ich beschloß mit fünf verschiedenen Stoffen für die Oberseite zu arbeiten und eine Rückseite im Regenbogenbunten Kontrast zu machen. Außerdem sollten die “Ecken” innerhalb des Quilt zickzackartig aufeinander treffen.

Gesagt, getan? Trotz anfänglichen Plans beim Stoffkauf über Nähhimmel , war es dann doch noch ein bisschen Puzzlearbeit die Streifen zu arrangieren. Ok, viel puzzlen konnte ich ja nicht mit einem großen Stoffstück Vögelchen auf Rosa und mehrern Streifen in passenden Farben. Und dann klickte das Prinzip “Progress is better than perfection” und es ging los. Ich habe meine 25 Zentimeter breiten Streifen gewaschen, begradigt, teilweise gekürzt und dann quasi drauflosgenäht. Als erstes das große Stoffstück, nennen wir es doch Statement-Stück, mit dem grünen Dreiecksdruck verbunden, dann den anderen Dreiecksstoff quer drüber genäht. Es folgte der Blumendruck und der helle Vogeldruck, für mich ist der irgendwie “oben” also die Kopfseite der Decke. Was das Nähen uns Stecken angeht habe ich locker Rachels Tutorial befolgt.

Mein batting, also die Füllung, ist etwas dick geraten. Shauna wird den Quilt daher auch gut als Spieldecke benutzen können… Auch hier ging ich vor wie Rachel: Batting auslegen, Deckenrückseite darauf, Vorderseite auf links darüber. Seiten zunähen bis auf eine Öffnung zum wenden. Überschüßigen Stoff vorsichtig abschneiden, wenden, bügeln, Öffnung von Hand zunähen. Da ich nicht wollte, dass Shauna Fäden lösen kann, habe ich traditionell mit der Maschine gequiltet, also Steppnähte gemacht. Bei mir einfach in den bestehenden Nähten. Dann noch eine Widmung – fertig!

Baked rhubarb cocoa muesli

Rhubarb season is coming to an end! I think I made good use of it with making rhubarb jelly again and sharing vegan rhubarb scones and coconut rhubarb cupcakes here on modewaerts. Rhubarb you will be missed dearly and the only thing that makes it easier to say “see you next year” is the fact, that strawberry season is in full swing!

I am planning on using the last stalks of rhubarb for a sorbet with strawberries mixed in as well. I had made a sorbet of these two before and then it was gone before I took a single photo. Same happened to the rhubarb liqueur…

Baked rhubarb muesli
1 tbs coconut oil
1 pinch vanilla extract
2 tbs cocoa powder unsweetened
5 tbs agave nectar or apple nectar
250 g oats

rhababer schoko muesli
Heat coconut oil with vanilla and stir in cocoa powder and sweetener. Add the oats, turn off the heat and stir well. Chop the stalks of rhubarb and mix the pieces into the oats. Bake at 150 C for 30 minutes to an hour or until the rhubarb pieces have dried out. Then turn off the oven and let the muesli cool down with and inside the oven. Use within the week.

This is a rather tart muesli, but sour makes happy, funny, or at least awake, no?

Salmon Asparagus Quiche

Isn’t it great to combine two favorite foods? It’s sort of like creating a super favorite food. Or something like it. In my case it’s asparagus – hey, first asparagus idea of the season! – and quiche. I’ve mentioned it before: quiche or tarte aux légumes is a comfort food of mine. As is basically everything that comes out of the oven. Maybe it has something to do with the warmth of the oven as well?

Anyway, I just recently discovered how well salmon and asparagus taste together. From there, and with a road trip on my mind, it was not hard to get to the idea of a salmon asparagus quiche. So here it goes…

Salmon Asparagus Quiche with a bearnaise style sauce
1 kg white asparagus
300g salmon
3 stalks spring onion

the usual dough as explained here

2 entire eggs
some lemon juice
3 tablespoons oat cream
1 t mustard
1 t sugar
some salt and pepper
1 tbs provencal herbs
150 g butter

Let’s start with a tip: buy peeled asparagus! In my town every booth seeling the queen of veggies does sell it peeled, too, and it’s so worth the extra charge. If you feel like peeling yourself, go ahead and do so as the first step. Blanch the stalks for 5 minutes in the steamer.

Prepare the dough and blind-bake it for ten minutes. I like to place a piece of parchment paper on the dough in its quiche dish and cover it in beans. Bake at 200°C.

If you haven’t done so already you would meanwhile blanch the asparagus. Clean and chop the spring onions and the salmon. It’s up to you if you use the fish skin or not, I prefer without. Heat a little olive oil in a skillet and saute onions and salmon.

In a tall vessel or a blender combine two eggs, lemon juice, oat creme, mustard and sugar and blend. Heat butter and add it to the mixture while blending. Don’t be shy to season with salt, pepper and provencal herbs.

Remove the beans from the quiche base and lay out the asparugus stalks. You will need to cut some of them if, like me, you are using a round baking dish. Spread the salmon and onions on the asparagus and cover everything with your bearnaise style sauce. Bake for 25 to 30 minutes on 200° celsius.

For me the mustard in the sauce really did the trick. I knew beforehand that I loved the fish and veggie flavour combination but our usual go to sauce hollandaise wouldn’t do the trick in a quiche. I can even see more mustard – or different types of it – in this for all of us who like it even more savory…

Coconut Rhubarb cupcakes with raw cane sugar (vegan)

I bought a packet of rhubarb. Partly because I just cannot get enough of this stuff and there never is enough in my parents garden and neither is the season long enough. And the other part of me just wanted to share my love for rhubarb on the blog. Little did I know that I would make three sweet recipes out of it. It’s like veggie of the month revisited only with fruit. So here is part one of a rhubarb mini-series.

Coconut rhubarb cupcakes (makes 14 cupcakes)
30 g shredded coconut
150 g raw cane sugar
3 medium stalks rhubarb
1 pinch pepper
1 ts natron
2 ts baking powder
100 g vegan fat at room temperature (me: 35 g coconut oil + 65 g vegetable spread)
150 ml oat milk
250 g einkorn flour
1 tbs soy flour

optional: apple nectar and shredded coconut for topping

Wash the rubarb and cut it into small pieces. “Marinade” rhubarb pieces in the sugar and shredded coconut. Add a pinch of pepper – pink pepper would be awesome! – black works fine.

Prepare the other ingredients my mixing them together. The more coconut oil you use, the more coconutty your muffins will be. Mix with a spatula or spoon in order to not squash the rhubarb. (I cheated and added these ingredients on top the rhubarb, worked well.)

Fill the cake cups with one spoonful of rhubarb dough and bake for 20-25 min at 160° C. Let cool down some and splash some apple nectar on top and sprinkle more shredded coconut.

These cupcakes are sort of Himalaya (origin of rhubarb) meets Caribbean. At least in my mind… If you like sweet meets pepper, take a look at my pink pepper cookies with pomegranate

Caramelized walnut-carrot cake – vegan

Have you wondered yet, where Hetty has disappeared to? We haven’t heard from her on modewaerts since her delish sweet potato and mangold pizza – and boy, was that a great meal idea! She just confirmed she will be back in the summer. For right now I only say: Internship, Switzerland, whoah…

Last year around this time Hetty made this fabulous carrot cake with one slice of it looking like an elephant. She made it for her family who devoured it within one tea/coffee time session, I believe. This made me curious – as I had never baked nor eaten sweet carrot cake – and I made a vegan version. It was good. It was actually so good that I ate the whole thing by myself, but I won’t mention that in public. I have? Oh, well…

Anyway, I took my time to savour each of the different flavours within it, the carrots, the walnuts, the cinnamon, and found that I would like to try a version with caramelized nuts. Usually I would not copy Hetty, as in repost her ideas here, but I do love to make and taste the things she made. Have you made her vegan panna cotta yet? You should!!!

Her recipe was before dairy-free or vegan days, so I can justify myself with having made a vegan version. I still feel bad for being a copy-cat. But then again this is not a battle and you make whichever one you prefer!

Caramelized walnut-carrot cake
125g walnuts, chopped
450g carrots, shredded

325 g spelt flour
3 teaspoons baking powder
2 teaspoons cinnamon
1 pinch nutmeg
½ teaspoon salt
1 pinch vanilla

3 tablespoons apple sauce
2 tablespoons soy flour or corn starch
1 gulp soda / sparkling water

50 ml apple nectar (Apfelsüße) or agave nectar
200 g raw cane sugar
200 ml sunflower seed oil

Start by roughly chopping the walnuts, then gently roast them adding half of the sugar and all of the apple nectar to caramelize. Stir frequently. Peel the carrots and shred them. I liked to bring out the carrots sweetness even more and sauteed them a little as well.

Mix the dry ingredients: flour, baking powder, spices and the remaining sugar. By the way, we are using raw cane sugar here because it already tastes slighty caramelly… Add oil. Apple sauce, soy flour or starch and soda work to replace the eggs here. Whenever I am not sure how to replace I use all three egg replacements to be safe. Works well for me. So add those three and mix everything together using a big spoon. I found there is no need for a mixer here. Fold in the carrots and caramelized walnuts.

Pour Scrape in a spring form and bake at 200°C for 30-35 minutes. Turn off the oven and let the cake sit inside a little longer. This is a really moist cake, yum!

I cut mine into a hexagon just for the fun off it. That also meant I could eat some of the cake while giving the rest of it as a present, ha!

Square Easter basket – Grow grass in a take out pizza box

Last year for Easter I ordered sod lawn. The advertising folders of the home improvement stores had been full of take away pizza type boxes with grass in them. I thought it was the coolest thing to order a patch of grass in a box for Easter decorations. To use it then as an nest (we do nests instead of Easter baskets) filled with chocolate eggs for the actual holiday.

I had found a place online in Northern Germany that would ship pizza boxed sod lawn for free. Just not into my state. So, no grass box for me. That was last year. This year I already knew way before the advertising folders arrived that I would have a square Easter basket in a pizza box. I would not blame you if you wanted one too…

Line the pizza box with plastic, fill with soil and sprinkle the grass seeds and water. Put in a sunny place and wait. What? I know! Since this a bit last minute get sod lawn at the home improvement store and put in in the box. Okay? Okay.

I can hardly wait for the weekend! Easter brunch, Easter egg hunt and Easter fire. And maybe we’ll go to a place where there will be fireworks too. What are your plans for the Easter weekend?
